Franz Keller became known as a German star chef. He trained under Jean Ducloux, Paul Bocuse and Michel Guérard. As one of the early proponents of “New German Cuisine,” he developed an individual culinary philosophy centered on regional and simple ingredients. He later turned away from the traditional fine-dining circuit and shaped his culinary work through the Adler Wirtschaft in Hattenheim in the Rheingau and the Falkenhof in the Wispertal.
