Marcella Hazan (1924–2013) was an Italian cookbook author and an influential interpreter of Italian cuisine. In 1956, she emigrated to New York with her husband, Victor Hazan. In response to numerous requests, she began teaching cooking classes in her own kitchen. She published her first cookbook in 1973, followed by five more. Together with Victor Hazan, she opened cooking schools in Venice and Bologna. Her cookbooks are regarded internationally as standard works on Italian cuisine.
